If you were planning a trip to Sagunt to discover its impressive heritage (castle, Roman theatre, Jewish quarter etc), there’s no excuse for not doing so given that the town is also home to a gastronomic restaurant that is well worth a visit. This delightful eatery, occupying the former stables of the 16C Palacio de los Duques de Gaeta, features imposing stone arches that provide the backdrop for cuisine that is respectful of traditional Mediterranean flavours but with a contemporary twist and a strong focus on technique. Chef Vicky Sevilla, a cook with lots of determination (she opened the restaurant when she was just 25), showcases modern, personal cooking with a strong connection to the local area (in the Valencian language, Arrels translates as “roots”) which can be savoured on three exquisite tasting menus: Executiu (lunchtime only), Saba and Arrels. The slightly elevated upper part of the dining room features an “island” where guests can enjoy dessert and watch the chef put the finishing touches to his dishes.
