Booking a table here is a must for those in search of an authentic gastronomic experience. This enchanting restaurant, part of the emblematic Canfranc railway station (nowadays a luxury Royal Hideaway Hotel), occupies an old train carriage that takes guests back in time. The journey starts on the platform of the station (which dates back to 1928) where the inter-war history of the setting (and its reputation as a hotbed for spies) is brought to life. A short stroll through the most beautiful parts of the building leads to the two restored carriages, only one of which, home to just three tables, offers a gourmet dining option. The single tasting menu, created by Canfranc-born chef Eduardo Salanova and featuring delicate French influence and the region’s best ingredients, includes dishes such as wild guinea fowl reared in the semi-desert of Los Monegros with a beetroot accompaniment; trilogy of lamb (one of the three dishes is roasted with seaweed to provide added saltiness); and a striking crown-shaped seafood with borage dish.
