Bib Gourmand: good quality, good value cooking

This small restaurant, located along a narrow street just a few metres from the Plaza Parroquial, provides the perfect opportunity to enjoy a true gastronomic experience. Rubén Miralles, the Castellón-born chef at the helm in the kitchen, showcases contemporary cooking that combines different trends with a non-zealous approach along with traditionally based dishes featuring top-quality ingredients. His aim is to take guests on a culinary journey from the local area (note his reinvented take on traditional recipes) to more globally inspired flavours that include forays into the cuisine of Arabia, Peru and Asia. His creative cooking is centred around four menus: Debé (lunchtime, midweek); Producte (a seasonal option showcasing local market gardens and the sea); Amarant (a vegan tasting menu); and Rubén Miralles (the most gastronomic) – the last two of which need to be booked ahead of time. Dishes we particularly enjoyed for their delicate touch and flavour included the vine tomatoes with natural and fermented salmorejo, and the espardeña (sea cucumber) with a boletus foam, “majado” and egg yolk.
