Two Stars: Excellent cooking
The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitchen. Always striving for deeper knowledge of seasonal raw ingredients, Mario Sandoval, through his "Madrid" menu (there is a vegan-vegetarian option) offers us a creative review of the cuisine of the capital but also, as they themselves say, of all that it can become.
