This highly unusual restaurant occupies an old paprika mill in the Espinardo district of Murcia, where the basement is home to an attractive private dining space and a themed museum dedicated to paprika (the fascinating and colourful collection of old containers is particularly impressive). The cooking here has its roots in tradition and the local region, albeit with a fun, imaginative and modern makeover, with no little technical skill. Head chef Rodi Fernández showcases his cuisine on an à la carte (the “panigiri” of red tuna and guacamole with a citrus and guacamole cream presented on an hourglass of sand was a complete surprise) and two extensive tasting menus: Molino and Taúlla. The selection of cheeses can be ordered at additional cost before dessert.
