True to the food culture of Osaka, which prizes freshness above all, Nishimura seeks out the finest of the catch at Kuromon Market with the eyes of a seasoned connoisseur. The ‘Yu’ in ‘Yuden’ is a Chinese character meaning ‘calm’ or ‘everlasting’. Nishimura carries on the traditions, techniques and spirit of sushi with a style indelibly his own.
