Chef Borja Aldea, having trained in great restaurants such as Etxanobe and Disfrutar, proposes a journey to the palatial era through contemporary cuisine, which takes the historical surroundings as a frame of reference and reinterprets the recipe book that existed in the court of King Philip V. You can choose between the à la carte service and the tasting menus, with such suggestive dishes as the Bollo Isabel de Farnesio, the Judiones de la Granja with pheasant consommé or the Segovian trout 2.0.
