Here, head chef Jordi Cantó serves creative cuisine that reinterprets the legacy of Mallorca’s traditional cooking, which is exclusively showcased on a single Wind and Memory tasting menu (choose between short or long formats). This menu focuses on the different winds that blow across Mallorca (Tramuntana, Gregal, Mitjorn, Ponent, Mistral, etc), on a journey full of nuances and childhood memories of the island’s cuisine, while at the same time leaving the door ajar for spices “brought by the wind” from countries further afield.
