The owner-chef of Sushi Hashimoto opened this restaurant for young people to showcase the spirit and skills they learned from him. Sushi is cut thick and portioned generously. At lunchtime, only nigiri is served, but both nigiri and side dishes are offered in the evening. Hiroyuki Hashimoto keeps a watchful eye over his young charges, to see that they grow to become chefs in their own right. The name is an amalgam of one Chinese character each from Hashimoto’s parents’ names. Graceful service by artisans devoted to their craft.
