Shinji Kanesaka tells the story of Japanese culture in sushi. The elaborately designed sukiya-style interior design and dinnerware reflect this aesthetic. In crafting his nigiri, Kanesaka prizes seamless harmony among the sushi trinity of rice, topping and wasabi. His love for baseball in his student days taught him the importance of teamwork, and his command of his staff from behind the counter is reassuring. The chef has branches overseas as well, preaching the wonders of sushi to the world.
