Eager to court the local community, the chef gave top billing in the shop name to familiar ‘chukasoba’ (ramen). Soup combines meat and seafood dashi for a deep, satisfying flavour. Kaeshi (a mixture of soy sauce, sugar and mirin) is supplemented with squid and fish sauce, enhancing umami. The low-hydration noodles are boiled only briefly, yielding a pleasing al dente texture that lets the flavour of the wheat come out. The taste of soy, smooth and refreshing yet rich and deep, conveys the simple honesty of the dish.
