Chef Shinichiro Sakurai has undying affection for Basque cuisine. During his time in France, he found his calling in the country cooking that drew him the most. The pork dishes listed on the blackboard consist solely of items Sakurai loves to cook, such as brawn, confit of shank, and char-grilled pork loin. The time and toil he devotes to each dish are testament to the respect and passion he feels for the Basque Country.
