Bib Gourmand: good quality, good value cooking
Having long devoted himself to Western cuisine, Chef Koga was struck by the subtlety of tonkatsu. The restaurant stocks an impressive array of famous pork brands, so diners can choose based on their preference for the sweetness and flavours of the fat, the fineness of the meat, or other qualities. The sauce, made from tomato and cumin, is based on his experience with Italian cuisine. The minced cutlet kneaded with several types of pork is especially recommended.
