Recalling the words of his mentor, ‘a chef must have a gentle spirit’, the chef devotes himself to his craft. To encourage patrons to trust him, he taught himself to be attentive to their needs and run a customer-first restaurant, in true kappo style. The menu is crammed with items, from reimagined dishes to simple preparations. ‘Mui’ in the shop’s name means ‘no contrivances, everything natural’. It’s fun to leave everything to the master and go with the flow.
