The commanding country house and surrounding grounds play host to a hotel, a spa, a cookery school and 20,000 acres of farmland – crucially, it also has a restaurant befitting of its grandeur. A gold detailed ceiling and carved wooden fireplace make the dining room an opulent setting for boldly flavoured, generously portioned dishes that still retain a lightness of touch. Sustainability plays a large role, with lots of produce coming from the estate.
