Sarukame is currently run by its second-generation owner-chef Hiroto Honma. Going beyond merely retaining the title of the restaurant, the current chef is carrying on its culinary legacy by staying in contact with its founder and preserving its original recipes. Such effort, coupled with Chef Honma’s vast experience in the restaurant business and gastronomic sensibility, garnered and developed over the years working in cities around the world, are adding new narrative layers to this establishment.
