The Lauwereins family bends over backwards to pamper you in its swish, yet cosy restaurant. Creative chefs Stefaan and Elien deploy state-of-the-art techniques to devise dishes in which every detail is endlessly pondered and puzzled over. The result is unabashedly bold and modern. Take, for example, the crunchy vermicelli of pleurote mushrooms in an earthy truffle cream which is paired with a refreshingly punchy black garlic and spinach puree. Wine waiter Kenzo’s inspired suggestions may surprise but his expertise and insight invariably guide him to suggest the perfect wine-food pairing for each dish and each diner.
