Bouffard has two different dining spaces to suit different moods: a snug lounge area at the front and a more vibrant room adorned with colourful artworks. Thomas Dockx is very selective when it comes to his ingredients, and he takes a less-is-more approach to preparing them. Eschewing any unnecessary frills, he allows the natural flavours to shine through with the help of robust sauces. In one of his exuberant dishes, he combines golden-brown pan-fried scallops, tender pork cheek and a creamed cheek broth. This chef understands how to create a well-rounded set menu that keeps you engaged from beginning to end!
