John van Leerzem is a fan of tradition and of the ingredient before all else. This institution on the main square of Maaseik does far more than showcase time-honoured classics. The chef happily subverts traditional recipes, particularly thanks to carefully devised side dishes, such as a terrine of veal cheek and tongue that he subtly contrasts with sweet-sour chutney. His stamp can also be tasted in the tournedos and stroganoff sauce that strikes a perfect balance of flavours. A feast for foodies!
