The chef takes pride in his “Shio Soba” (salt noodles), his quest for a bowl of perfection. Taste the seaweed—sea lettuce and nori—and you can feel the rustle of sea breezes. Triple soup of fish, shellfish and chicken is prepared using Pi-Water, a water that is said to be extremely similar to water in living tissue. High hydration ramen noodles, prepared with a blend of three types of wheat flour, produces a texture similar to noodles kneaded by hand. Three types of chashu are served as well, combining pork and chicken. Bringing out the best in soup, noodles and chashu for a triple treat.
