Having learnt his craft in Paris, through which the River Seine flows, owner-chef Makoto Shigeno chose Kyoto, with the Kamo River flowing through it, for his French restaurant. In this bistro for beef lovers, fillet and rib roast from cows that have given birth and wagyu rump are on offer. The meat is grilled so that the outside is as fragrant as if it were deep-fried yet still rare in the centre. The succulence of the red meat demands to be savoured.
