Having first come to France to work in a traditional inn in the Beaujolais region, he is now serving cuisine that speaks to his dual culinary culture (French and Japanese). His tasting menu alternates classic French dishes with ingredients prepared on the teppanyaki – expertly infused with subtle Japanese flavours. Fresh produce (fish, meat and vegetables), mouth-watering dishes such as pan-fried foie gras, melt-in-the-mouth kohlrabi and veal jus, and on-point cooking and seasoning make this a delightful culinary escapade.
