Standing in the heart of the delightful village of Bidart, it exudes a quiet, refined atmosphere. The couple who run the place, defectors from Michel Guérard's restaurant, serve nice seasonal precisely cooked dishes, full of good local Basque produce e.g. farm-reared pig, line-caught tuna, black cherry, mature farm cheeses.
