In this restaurant on the banks of the River Loire, diners enjoy chef Sylvain Justice’s creative, high-spirited cuisine with lashings of generosity to boot: soup of bouchot mussels in kari-gosse spices, green peas, confit of lemon and crunchy croutons; carpaccio of squid, peppers and lemon; roast monkfish, lobster bisque risotto with parmesan and basil; roast John Dory, spring veggies and hollandaise sauce; nectarines in verbena and almonds or Mirabelle plums and mead in shortbread.
