Château de Courban is a 19C mansion with a burnt sienna-coloured façade, looking out over its grounds. Preceded by a plush lounge with a crackling fireplace, the restaurant is housed in the property's converted barn, which boasts a beamed ceiling in the regional style, chandeliers and mirrors. The chef, Maxime Lesobre, serves appealing cuisine influenced by the South of France and rooted in classicism, preferring to work with hand-picked seasonal ingredients over local terroir. Flavours, interplay of complementary textures (particularly when it comes to fruit and vegetables), concentrated jus and sauces that add depth, various cooking techniques (Japanese barbecue, slow cooking at low temperatures, traditional methods): they certainly keep your palate interested, thanks to memorable dishes such as the candied tomato accompanied by its condiments.
