Chef Sébastien Sanjou pops in from down the road (the Relais des Moines at Arcs-sur-Argens) to supervise the cooking of this luxuriously appointed restaurant in the cellar of one of the finest winegrowing estates of the Var. As guests savour the superlative setting (a panoramic landscape of vineyards and olive groves outdoors and a designer-inspired interior), they dig into fine seasonal provençal cuisine which makes the most of the estate’s wide range of produce (chicken coop, orchard, cottage garden, olive groves), illustrated by a tartare of cucumber and fennel with fresh herbs; Mediterranean skipjack, crunchy salad of quinoa and courgette spaghetti. The food is naturally washed down with one of the estate’s fine organic vintages. A few guestrooms and holiday cottages are available to prolong your stay in style.
