In a dining room as fresh as a spring morning, the former owners of the Moulin du Ponceau (Chartres), for whom sourcing locally is deep in their DNA, wanted to get closer to nature and to their producers. The chef crafts dishes in the zeitgeist with a weakness for seafood and veggies, depicted by hake from the coast and multiple versions of cabbage. Fermentation is a prominent feature of his cooking.
