A chic, cosy bistro atmosphere reigns in the restaurant of Grenoble-born chef Fabien Beaufour. He has worked in some of the finest Michelin-starred restaurants in France (eg Anne-Sophie Pic in Valence and Patrick Henriroux in Vienne), as well as in New York and London. So it's hardly surprising that his cooking is unconventional, globe-trotting and eco-responsible. Intense, contrasting flavours and spot-on cooking and seasonings. Signature dishes include delicious miso-glazed black cod slow-cooked on the robatayaki, warm octopus salad, Piedmont hazelnuts with salted butter caramel.
