Part of a luxury resort in the midst of the sweet-scented Luberon gorse land, this restaurant sports a Provençal-style interior and a patio shaded by a pergola overlooking the surrounding hillsides. Chef Pierre Marty crafts distinctive cuisine, packed with rugged flavours (chilli, ginger, etc.) and strong Mediterranean influences, yet his consummate signature dish is a textbook pithiviers of poultry and foie gras. Vegetarian menu, trolleys brimming with home-made bread and splendid cheeses, plus a remarkable wine list, in which the estate’s wines figure prominently.
