The chef has turned his Jardin des Remparts into a “living table”. This fashionable, classy bistro uses premium ingredients in a menu ranging from pre-dinner snacks to share with friends (Gillardeau oysters, charcuterie and French fries) to a selection of mouth-watering, well-crafted seasonal dishes. The bistro’s namesake (garum) is a fermented sauce, popular with the Romans, that Christophe Bocquillon uses to season beef tartare, in particular.
