Vanessa Massé, a renowned sommelier who is always on the hunt for natural wines, collaborates closely with her associate, Finnish chef Pinja Paakkonen, who has already worked in a MICHELIN-starred kitchen in Denmark. On the ground floor, in a decor characterised by its bold use of cool tones, Pure & V features a healthy and balanced menu, based on carefully sourced ingredients, with particular emphasis on vegetables: roasted fennel, sauce fermented with white asparagus and fresh dill oil; quail cooked whole, smoked beurre blanc; bavarois with camomile and satsuma mandarin. In the evening only, a simpler menu at Pure & Vins upstairs.
