In the shade of olive groves and released from gastronomic codes, he crafts 100% authentic dishes in a style that he himself joyfully describes as “grandma’s country cooking”! "The menu changes every day, often even between lunch and dinner. The fruit and vegetables are grown in the organic kitchen garden and the rest of the produce is sourced locally, notably in the markets of La Provence Verte. The chef has a no-waste philosophy, using the ingredients in their entirety ; any leftovers are given to the animals or transformed into compost. New building on the site seeks to minimize the environmental impact."
