In his "méson" (which means "house" in Gallo, the language of Upper Brittany), the chef-owner goes all out Breton, showcasing seafood and other regional ingredients (buckwheat, lait ribot (Breton buttermilk), Coco de Paimpol beans, salted butter) that he sources locally. "Close to the port, the choice to work with day boat fishermen was self-evident. Favouring those who use responsible methods, particularly the avoidance of spawning periods, represented a further step towards a sustainable dynamic. Alongside a strong commitment to organic produce and local sourcing, we practise zero waste, among other things, by systematically offering a "doggy bag" and recycling the cooling water from the kitchen for cleaning."
