He has a perfect grasp of the classics, and this cosy restaurant with rustic touches is a lovely setting in which to eat: cauliflower in a brioche crust, mousseline cream; organic veal, peas and carrots, sauce Périgueux-style jus; crêpes Suzette flambéed on a pedestal table.
