Established in a small village between Mirepoix and Pamiers, Mélanie Zervos and her partner Mickaël Cappella welcome you with open arms. The charismatic chef shines a spotlight on local produce: salad of pork trotters and herring "like a stuffed onion" on a potato emulsion in a surf/turf dish that packs a punch; medallion of veal cooked so that it is still pink in the centre, basil and vegetables from nearby market gardens; a deconstructed millefeuille that delivers all its promises in terms of textures… Hard to beat!
