Overlooking the grandiose seat of the Senate (upper house of the French parliament) and the Luxembourg gardens, this friendly bistro in tune with its era sports untreated materials (exposed stone, brickwork and rafters), an open kitchen and a small counter. ‘Ambos’ (‘both’ in Spanish) refers to Pierre Chomet and his Venezuelan wife, Cristina. Their culinary adventures have taken them from Bangkok to London and Paris, and a Top Chef TV season for Pierre. Together they concoct a light-hearted, personal and vibrant tapestry of flavours which aims to please as it draws on a variety of influences – European (Castilian beef and Paimpol beans) and Thai (pad thai-style langoustine tartar,) as well as South American (stuffed arepa cornbread).
