In the kitchen, chef Olivier Cloteau expertly crafts seasonal dishes that pay homage to the Cantal region and its producers, without forgetting a few nods to his Charentes roots (mouclade (mussels in saffron) as an appetizer). 100% wholesome, hearty nosh.
