The concept is ‘a balanced diet for a healthy body’. The chef is a disciple of ‘yakuzen’, food that supports physical and mental health based on Chinese medicine. Spices and fermented seasonings are applied to practise a healthy diet. The chef selects quality ingredients, growing Chinese and traditional Japanese vegetables himself. Meals are prix fixe only; lunch includes dim sum and yakuzen soup. In the evening, local ingredients and Sichuan and Guangdong recipes combine in culinary creations found nowhere else.

"We grow the vegetables in our private garden using cyclical farming methods. We don’t use pesticides or chemical fertilisers, so we’re protecting the health of the land. All food is used, nothing is wasted—for example, food scraps are composted to contribute to soil formation. Our focus on local varieties of vegetables is aimed at preserving the food traditions of the region."
