MICHELIN Guide's Point Of View

Bib Gourmand: good quality, good value cooking

It is a real pleasure to see the terrific produce gracing the plates at Gutsküche, just outside Hamburg – this is sustainable gastronomy par excellence! The organic ingredients from their own estate, Hofgut Wulksfelde, are the absolute focal point of the cooking, and the menu features vegetarian dishes that can be supplemented with fish, poultry and meat "garnishes". GUT's caprese with hand-scooped buffalo mozzarella, rocket and tomato pesto, for example, is a marvellous seasonal dish – the wonderful aroma of fully ripe tomatoes remains in the memory! Tip: Snacks can be purchased at GutsDeli and delicatessen shop, as well as organic produce in the on-site farm shop. In summer: organic ice cream in the lovely GutsGarten.

Gastronomy & Sustainability

MICHELIN Green Star

"I can describe my cuisine as "unconditionally sustainable" with a clear conscience. For us, it's all about a love of pure produce and preparing enjoyable meals with a clear conscience. Honest, passionate cuisine made from fair produce and organic farming – after all, "organic" is the most normal thing in the world."
