The basement of the Altus Palace Hotel – a beautifully restored building from the 19th century – makes a wonderful setting for this elegant restaurant with an atmospheric red-brick vaulted ceiling. The subtly creative cooking draws on the experiences of the well-travelled chef; marinated mackerel, for instance, comes with Nordic-inspired dill granita, cucumber and apple. The friendly, confident service has a pleasing lack of stuffiness.
