MICHELIN Guide's Point Of View

This small restaurant, which takes its name from an abbreviation of the English word “hidden”, is located halfway between La Latina and the monumental Plaza Mayor. It is unique in every sense, enhanced by its subdued lighting, pleasant background music and the soul of an authentic and somewhat secretive cocktail bar. This is definitely a restaurant with a difference as José Miguel Gutiérrez (bartender an owner) and Madrid chef Omar Martín have created a concept that combines mixology and fine dining as part of a unique experience, in which elegant cocktails act as the liquid component of their tasting menus (Carpe Diem, Origen and Metamorfosis), all featuring the option of adding this special pairing. The dishes here are striking due to their combination of Galician and Mexican cooking, as part of which much of the fish and seafood served is sourced daily from the auction in Malpica de Bergantiños (Coruña province). We particularly enjoyed the lobster “caldeirada” sequence.
