In the kitchen, the chef hits the mark with flavoursome dishes that include a few nods to the region: Noire d'Astarac Bigorre chicken ravioli, poultry consommé with vegetables, foie gras; saddle of suckling lamb, pommes Duchesse, glazed lamb sweetbreads.
