"We're renowned for our whole-animal approach to butchery, our offal dishes and, of course, our legendary traditional "sow dances"! However, our commitment to sustainability goes far beyond that! We have a gardener who grows our vegetables in a sustainable and ecologically sound way. We use game from the Leitha Mountains and fish from Lake Neusiedl, we keep our own lambs and chickens, and we get poultry from our neighbours. We live and breathe our work."
