The ikejime dry-aged sea bass, for example, from the restaurant's own maturing cabinet, is excellent. In addition to the à la carte menu, patron Ingmar Goetzloff will talk you through the latest creations at your table. He will also be happy to advise you on drinks – they have a nicely curated wine list with around 400 labels.
