The stately ceiling and 8-metre-wide gold-leaf painting stun visitors. The image features three tigers and two rabbits; creating the effect of watching a stage. Saryo Tesshin stakes its reputation on its creative soba, and indeed the “Daigo Soba” is renowned. The soba is slathered in a snowfall of Parmigiano Reggiano cheese, in imitation of ‘daigo’, an early form of cheese. Bonito soup and olive oil create a conversation between Japanese and Italian.
