From the terrace or behind the bay windows of the elegantly decorated dining room, bistronomy is at the heart of the chef's offering: Valentin Chappuis' caramelised pork belly, patatas bravas and crispy sucrine; Mediterranean-style scorpion fish, taggiasche olives, tomato marmalade with basil and panisse.
