Whole truffles are on offer here, and indeed ‘Margotto’ is a creative spelling of marugoto, ‘the whole thing’. The concept is revolutionary: guests can choose a single bead of the truffle of their liking. The chef brings his Japanese cuisine experience to bear on a base of French cuisine. Consommé of kombu dashi is poured into wine glasses, the better to enjoy its fragrance. Truffles are even paired with fried eggs on toast and raw egg on rice. Enjoy this moment of mellowness to its fullest.
