MICHELIN Guide's Point Of View

Moored on the banks of the Adour, this former bargemen's inn is said to be over three centuries old. It still proudly boasts its spruce white façade with the characteristic red shutters of the Basque Country and an interior with its cachet intact – stone flooring, exposed beams and an open fireplace. Even the original fish counter and the hooks for drying the fish are still present and correct. This restaurant, which for 30 years was run by famous Basque chef Christian Parra, now has Stéphane Besse at the helm. Very local ingredients are the foundation of his fresh, colourful cuisine; the fishermen, duck and lamb farmers, the baker, the ceramist (who designed the plates) are all from the village.
