Its Latin name pays homage to agriculture-related religious festivals held during Roman times, and this is exactly what Feriae is looking to showcase. The philosophy champions seasonally inspired organic ingredients sourced from small-scale producers, with a focus on the maximum usage of the produce used, and a reduction in the use of plastic in accordance with sustainable practices that influence the flavour of their dishes. The open grill is the main cooking technique used in a number of dishes such as the grilled leeks served on a bed of romesco sauce and quark cheese, which is an excellent choice as a starter. The organic cooking here is complemented by a selection of natural wines that are in perfect harmony with the dining experience.
