The chef tends his on-site kitchen garden, incorporating its bounty into fine French dishes that are plant-forward and include influences from around the globe. By enriching his duck jus with mole, he imbues duck breast with spicy-sweet nuances; textures of kumquat give the sweetbreads an exquisite twist – each plate is full of surprises.
